NY onion sauce

Go ahead - try this infamous condiment for the New York hot dog.
Ingredients
- 5-6 lg onions peeled and sliced
- 2-3 Tbl tomato paste
- 1/4 C water
- fresh ground pepper (1/4+ tsp)

Method
Slice onions 1/4" thick. Sautee in large saucepan with 1/8 - 1/4 cup water. Do not brown onions. Only saute until crunch tender. Add tomato paste, fresh ground pepper. Stir, cook only until tender. Do not over cook. Boil hot dog, add brown mustard, add onion sauce. YYUUUUMMMM
Notes: Boil hot dogs. Don't grill. Mustard must be brown whole grain or stadium mustard.
