One Pot Beef and Potatoes

Cubes of seasoned beef are cooked in a tomato liquid, with potatoes, onion, bell peppers and garlic, until very tender.
Ingredients
- 1 to 2 lbs lean beef stew meat, cut in cubes
- Adobo seasoning
- Pepper
- Pure virgin olive oil
- 1 can Italian tomato paste
- 2 cans water
- 2 large potatoes, cut in chunks
- 1 large onion, cut in thick wedges or slices
- 1 clove garlic, chopped
- l medium green bell pepper, sliced
- 1 medium red bell pepper, sliced
- Cooked rice or noodles

Method
Season meat with adobo and pepper. Put olive oil in large pot, heat, and add stew beef. Cook on all sides until nicely browned. Add tomato paste and water. Mix and let come to a boil. Place on low heat and let simmer for 1 hour. Add vegetables and enough water to cover. Let it come to a boil and simmer on low for another hour. Serve over noodles or rice.
Notes: This is a great winter dish and easy clean up. The stew beef is so tender you won't believe it. I think adobo seasoning is what makes it so delicious. Don't be stingy with the seasoning either.
