Oven Swiss Steak

Here beef round steak is baked with a thickened tomato-vegetable sauce.
Ingredients
- 1-1/2 pounds beef round steak, cut into 3/4" thick
- 1/4 cup all purpose flour
- 1 tsp. salt
- 2 tbsp. shortening
- 1 16 oz. can tomatoes, cut up
- 1/2 cup finely chopped celery
- 1/2 cup fine chopped carrot
- 1/2 tsp. Worcestershire sauce

Method
Cut meat into 6 serving size portions. Combine flour and salt; pound 2 tbsp. of the mixture into meat. Brown the meat on both sides in hot shortening. Transfer meat to a 12x7x2" baking dish. Blend remaining 2 tbsp. flour mixture into pan drippings. Stir in undrained tomatoes, celery, carrot, and Worcestershire. Cook and stir till thickened and bubbly; pour over meat. Bake covered at 350 till tender; about 1 hour and 20 minutes.
