Oven Beef and Cheese Fondue


This casserole, sometimes called a "strata," has bread cubes, eggs, milk, cooked beef, cheese and seasonings baked together.



Ingredients:

  • 10 slices low-carb bread
  • 6 eggs, beaten
  • 3 cups skim milk
  • 2 cups diced leftover pot roast (or any other cut of cooked beef)
  • 2 tablespoons snipped cilantro
  • 1/2 teaspoon dry sage
  • 1/2 teaspoon dry mustard
  • 1 teaspoon lime pepper
  • 2 cups shredded lowfat or soy cheese
  • 1/4 cup sliced green onion including the tops

Method

Heat oven to 325 degrees. Remove crust from bread, cut bread into cubes; set aside. Beat eggs, milk, and seasonings together. Stir in bread, diced beef, cheese and green onion. Spray a baking dish (11x7x2 inches) with nonstick spray. Pour mixture into baking dish. Bake, uncovered, about 1 hour or until center is set. Serve immediately

Notes: I usually serve this with a green salad. Sometimes I add a side of green beans or broccoli.
