Oxtail Barley Soup

A rich, full flavored soup with potatoes, barley and simmered oxtails.
 

Ingredients

  • 9 cups water
  • Oxtails
  • 2 stalks celery
  • 3 carrots
  • 5 peppercorns
  • 2 bay leaves
  • 1 cup pot barley
  • 4 potatoes, peeled and cubed

Method

Make broth with oxtails, celery, carrots, peppercorns, bay leaves, and barley. Season with salt. Simmer for at least 3 hours. One hour before serving, remove oxtails and add potatoes.
