Oxtail Splash

Beef oxtails are used in this stew that also contains potatoes, macaroni, mixed vegetables, canned tomatoes and tomato soup.
 

Ingredients

  • 4-6 beef oxtails
  • 4 cups water
  • 1 onion, chopped
  • 4 stalks celery
  • 2 bay leaves
  • 2 garlic cloves, crushed
  • Salt and pepper to taste
  • 1 can tomato soup
  • 14 oz can stewed tomatoes
  • Small bag mixed vegetables
  • 2-3 Idaho potatoes, cubed
  • 1/2 cup uncooked macaroni

Method

Put oxtails in water with celery, onion, bay leaves, salt, garlic, and pepper. Cook covered, until oxtails are tender, probably about 1 1/2 hours. When tender add frozen vegetables, stewed tomatoes, potatoes, tomato soup & macaroni; season again with salt and pepper. Cook on medium heat until potatoes are done.
