Pancake Chili

A ground beef, chili and cheese casserole topped with a corn and chili-flavored crust--a hearty and wholesome dinner all in one dish.
Ingredients
- 2 lb ground chuck
- 1 cup chopped onion
- 1 can kidney beans
- 1 1/2 cans creamed corn
- 1 tsp chili powder
- 1/2 pkg large cheddar cheese
- 1 cup green pepper
- Topping:
- 1/2 can creamed corn
- 2 eggs
- 1 cup buttermilk pancake mix
- 1 tsp chili powder
- 1/2 large pkg grated cheddar cheese

Method
Brown ground beef with onions in a skillet. Drain beef and add to a large casserole dish. Add remaining base ingredients. Mix topping ingredients in a separate bowl and spread on top of casserole. Bake at 350 degrees for 1 hour.
