Paprika-Spiked Beef and Slaw Hoagies

A beef rump roast is seasoned & roasted in a liquid with apple jelly, cola, vinegar & mustard, then sliced and served in buns with slaw.
 

Ingredients

  • 1 (4-5 lb) lean beef rump roast
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1/4 teaspoon smoked sweet paprika
  • 1/8 teaspoon cayenne
  • 1/4 cup oil
  • 2 medium onions, thinly sliced
  • 1/2 cup cola-flavored soft drink
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons prepared mustard
  • 1/4 cup apple jelly
  • 2 tablespoons Worcestershire sauce
  • 8 hoagie buns, lightly toasted
  • 1/3 cup mayonnaise
  • 2 cups purchased coleslaw, well drained

Method

Heat oven to 325 degrees. Score roast over entire surface. Stir together next six (dry) ingredients in a small bowl. Sprinkle over scored roast. Heat oil in a large skillet over medium-high heat. Add roast and sear on all sides. Place in a foil-lined roasting pan. Spread onions over top. In a small bowl, stir together soft drink, vinegar, mustard, jelly and Worcestershire sauce. Pour carefully over onions. Cover and bake for 3 hours. Remove cover. Bake for 30 minutes more. Let rest for 10-15 minutes before thinly slicing. Lightly spread buns with mayonnaise. To assemble, add slices of beef and onion to bottom of buns. Top each with 1/4 cup coleslaw. Add bun tops. Serve immediately.

 

Notes: These popular sandwiches are so easy to make. Cook beef the day before then reheat just before serving for a quick and delicious meal.
