Peasant's Pie


This hearty meal is a great way to fill up and warm up.



Ingredients:

  • 1 24 oz bag of baby Yukon gold potatoes
  • 2 tbsp butter or margarine
  • 1 lb ground lamb (may use ground beef if preferred)
  • 1 lb. sage flavored pork sausage
  • 1/2 cup chopped onion
  • 1/2 tsp minced garlic
  • 1 cup frozen peas and carrots
  • 2 tbsp grease from meat mixture
  • 2 tbsp flour
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 tbsp chives
  • Paprika to sprinkle on top

Method

Rinse and scrub potatoes, leave the skins on and place in a pot of water and bring to a boil. When potatoes are fork tender, about 10-12 minutes, they are done. In a skillet, melt the butter and fry the ground lamb and the pork sausage until browned. Add the chopped onion and minced garlic and continue to cook on low heat. In a smaller pot, take 2 tbsp of the juice from the meat mixture and add the 2 tbsp of flour to it. Mix thoroughly for 1-2 minutes, whisk in the cup of chicken broth and allow to thicken about 1 minute. Add the gravy to the meat mixture, add the peas and carrots and continue to cook for about 10 minutes. Remove the potatoes from the water and place in a mixing bowl. Add the sour cream and chives and using a hand mixer, blend until semi smooth. Pour meat mixture into a 3 quart oven safe dish and spread potato mixture on top of meat. Sprinkle paprika lightly over the top of the potatoes and place entire dish under an oven broiler for about 5 minutes, or until potatoes begin to brown. Remove from broiler and enjoy.
