Peppy Stuffed Peppers
This is similar to a beef and rice casserole served in your very own pepper. This creative dinner is great for any occasion.
Ingredients
- 4 green peppers
- 1 lb ground beef
- 2 cups cooked rice
- 1/4 cup chopped onion
- 1 1/2 tsp salt
- 1/8 tsp black pepper
- 2 8 oz cans tomato sauce or soup

Method
Cut peppers in half lengthwise. Remove seeds and wash. Combine beef, cooked rice, onion, salt, black pepper and 1/2 cup tomato sauce. Pile mixture into peppers and place on a large baking pan. Pour remaining tomato sauce over each pepper. Cover tightly and bake at 350 degrees for 1 1/4 hours or until peppers are tender.
