Pizza Boats

A meatloaf mixture is spread over split French bread, topped with cheese and olives, and baked. Quick to put together on a busy weeknight.
Ingredients
- l lb. ground beef
- 1- 8 oz can tomato sauce
- 1 medium onion, chopped fine
- 1 clove garlic, minced
- 2 T. chopped parsley
- 1 1/2 tsp. salt
- 1 tsp. dried oregano, crushed
- l loaf unsliced French bread, cut in half lengthwise
- 4 oz. cheddar cheese, shredded (1 cup)
- 1 2 1/4-oz. can sliced pitted ripe olives, drained

Method
Mix ground beef, tomato sauce, onion, garlic, parsley, salt, oregano, and pepper in a large bowl. Spread mixture over each French bread half. Sprinkle shredded cheese and sliced olives over the mixture. Bake the halves on a baking sheet in a 350 degree F. oven about 30 minutes, just until the meat is done (160 degrees).
Notes: This is a request for Christmas eve dinner at out house. Quick and easy for a busy mom and filling for teens.
