Plum Good Russian Style Kebabs

Plums and red currant jelly gives these kebabs a great Russian flavor that is unbeatable.
 

Ingredients

  • Marinade:
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon red onion, minced
  • 1 tablespoon brown sugar
  • 2 teaspoons ground coriander
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon ground cloves
  • 2 pounds boneless beef for kabobs (cut in 1/2 inch chunks)
  • 4 firm ripe red plums, pitted and cut into quarters
  • 1/4 cup red currant jelly
  • 1/2 to 1 teaspoon salt
  • 1 tablespoon finely chopped fresh rosemary
  • Garnish: 8 fresh herb sprigs and 8 small red onion rings

Method

In small bowl, whisk together marinade ingredients. Place beef in food safe plastic bag. Pour marinade over beef and turn to coat. Seal bag and marinate in refrigerator 30 minutes to 2 hours, turning occasionally. Remove beef from marinade and discard marinade. Alternately thread beef and fruit onto 8 metal or bamboo skewers. Place skewers on grid over medium ash covered coals and cook 10 to 15 minutes for medium rare to medium doneness, turning occasionally. Place jelly in small sauce pan on grill and stir until melted. Brush kabobs with jelly during last 3 to 4 minutes of cooking. Season kabobs with salt, as desired. Sprinkle with chopped rosemary. Garnish plates with fresh herb sprigs and onion rings.

 

Notes: These are great served with parsley buttered red potatoes and coleslaw. If using bamboo skewers, soak skewers in water at least 20 minutes before using.

 

Number of Servings: Serves 4 to 6.
