Polynesian Meatballs


Tasty batter fried meatballs with a tangy, sweet sauce flavored with pineapple and crunchy jicama.



Ingredients:

  • 1 lb ground beef  
  • 1/2 c minced onion  
  • 1/2 c chopped walnuts  
  • 1/2 c fine dried bread crumbs  
  • 1/4 c milk  
  • 1/4 tsp salt  
  • pinch black pepper  
  • 3 eggs  
  • 3/4 c flour  
  • 1/4 c oil  
  • 1/4 c white wine  
  • 3/4 c beef stock  
  • 1 c fresh pineapple tidbits  
  • 1/2 c peeled and diced jicama  
  • 2 tbsp cornstarch  
  • 1/4 c sugar  
  • 1/4 c white vinegar  
  • 1 tbsp soy sauce

Method

In a mixing bowl, combine ground beef, onion, chopped walnuts, bread crumbs, milk, salt and pepper. Mix well and form into 12 meatballs. In a small bowl, beat the eggs. Add flour and stir until smooth. Dip meatballs into batter and coat well. Heat the oil in a large skillet. Add meatballs and cook over medium heat until meatballs are done and batter is golden brown. Pour off drippings. Add wine, stock, pineapple and jicama to skillet, and simmer uncovered for about 5 minutes. In a cup, mix together cornstarch, sugar, vinegar and soy sauce and blend until smooth. Stir into meatball mixture and cook until thickened. Serve over rice.
