Portabella Mushroom Meatloaf

The rich flavor of portabella mushrooms add an elegant touch to the humble meatloaf.
Ingredients
- 2 lbs hamburger
- 1 can tomato paste
- 1 4 ounce portabella mushroom cap, small dice
- 1 small yellow onion, finely chopped
- 1 clove garlic, grated
- 2 tablespoons herbs de provence
- 2 tablespoons brown sugar
- 1 large egg
- 1/4 cup Italian bread crumbs

Method
Preheat oven to 375 degrees. In a large bowl, combine all ingredients throughly and place in a 5 X 9 loaf pan. Cover with foil and bake 1 1/4 hours.
