
This meatloaf is made with Rotel tomatoes, tomato sauce, egg, and saltine crackers. It's flavored with dry ranch salad dressing mix.
Preheat oven to 425. Mix all ingredients together, reserving 1/3 of tomato sauce. Press into a long loaf in a 9 x 13 baking dish. Spread remaining tomato sauce on top of mixture. Bake for 40 minutes, remove from oven and drain off grease. Continue baking for 10 to 15 minutes more or until done.
Notes:
This makes wonderful meatloaf sandwiches the next day, if there is any left over!
