
Pieces of flank steak are seasoned with salt, then grilled and drizzled with a wine, vinegar and shallot reduction.
Cut London broil into 2 equal portions; place in a large ziplock bag with salt. Let sit on countertop for 1/2 hour so salt absorbs into meat. Drizzle meat with olive oil then place on grill.
Meanwhile, put red wine, vinegar, & shallots in small saucepan. Cook on low heat until reduced to a nice glaze. Grill meat to desired doneness. Drizzle with glaze and sprinkle pepper and parsley over the top. Serve.
Notes:
Marinating the meat in salt will enhance the flavor of the beef as well as tenderizing it. If desired, filet mignon can be used instead of London broil.
