Sesame-Ginger Beef Stir-Fry

Thin strips of beef and assorted vegetables (including onion, bell pepper and mushrooms) are stir-fried and coated with sesame-ginger sauce. Serve with rice or fine noodles.
Ingredients
- 1 lb. beef top sirloin steak, cut into thin bite-size strips
- 1 cup light sesame-ginger sauce
- 1 small cooking onion, sliced
- 4 cups sliced assorted fresh vegetables
- 1/2 large red or green bell pepper, cut in thin strips
- 1/4 lb. oyster, shiitake or crimini mushrooms, sliced
- Hot cooked rice or fine noodles

Method
Heat a lightly oiled non-stick pan or wok over medium-high heat. Add 2 tbsp sesame-ginger sauce to beef strips before adding to pan; stir-fry beef for 2-3 minutes. Remove beef from pan and set aside. Bring pan back to medium-high temperature. Add onion slices and stir-fry until tender. Add other vegetables and stir-fry for 2-4 minutes till crisp-tender. Remove from pan. Add bell peppers and mushrooms; stir fry until crisp-tender. Reduce heat. Return beef and all vegetables to pan. Add remaining sesame-ginger sauce and coat well. Heat through. Serve immediately with rice or fine noodles.
