Sesame and Cumin Seed Crusted Steaks


Tender grilled steaks seasoned with sesame and cumin seeds--served with a relish made of yellow bell pepper and Kalamata olives.



Ingredients:

  • 1 tablespoon sesame seeds
  • 2 teaspoons cumin seeds
  • 1/4 teaspoon freshly ground mixed peppercorns
  • 1/2 teaspoon salt
  • 4 boneless beef chuck eye steaks, cut 3/4 inch thick (about 1 1/2 to 2 pounds total weight)
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup diced red onion
  • 2 tablespoons chopped pitted Kalamata olives
  • 3 tablespoons apricot nectar
  • 1 teaspoon freshly grated ginger root
  • Garnish:
  • Red onion rings and whole Kalamata olives

Method

Combine sesame seeds and cumin seeds in heavy zip top plastic bag. Crush seeds with meat mallet or rolling pin. Reserve 1/4 teaspoon crushed seeds for onion relish. Add pepper and salt to remaining seeds and press mixture evenly into beef steaks. Heat ridged grill pan or large nonstick skillet over medium heat until hot. Place steaks in pan and cook 9 to 11 minutes for medium rare, turning once. Meanwhile, combine bell pepper, onion, olives, nectar, grated ginger root, and reserved crushed seeds in bowl and mix well. Serve steaks with relish. Garnish with red onion rings and olives.

Notes: If you don't have a well seasoned pan, spray pan with cooking spray before heating.
