Sicilian Meat Roll


This flavorful Sicilian style meatloaf recipe not only tastes good but looks good as well. A spiral of ham and cheese adds interest to the ground beef mixture that is seasoned with oregano and garlic.



Ingredients:

  • 2 beaten eggs  
  • 3/4 cup fine dry bread crumbs  
  • 1/2 cup tomato juice  
  • 2 tsp. snipped parsley  
  • 1/2 tsp. oregano  
  • 1/2 tsp. salt  
  • 1/2 tsp. black pepper  
  • 1 clove garlic, minced  
  • 2 pounds ground beef
  • 8 slices ham (thinly sliced lunch meat)
  • 1 1/2 cup shredded cheese (mozzarella or cheddar)    
  • 3 slices cheese (mozzarella or cheddar)                      

Method

Combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper, and garlic. Mix well. Stir in ground beef, mixing thoroughly. Place mixture on a large sheet of foil and pat into a 10- x 12-inch rectangle. Arrange ham slices on top of ground beef mixture, leaving a small margin on the sides. Sprinkle shredded cheese over ham. Starting from the short end, carefully roll up meat, using the foil to lift. Seal edges and ends. Place roll with seam side down in a greased 13- x 9-inch baking pan. Bake in a 350 degree oven for 1 hour and 15 minutes (center of roll will continue to look pink from the ham). Remove from oven, place cheese slices over top of roll and return to oven for 5 minutes or until cheese melts.
