Slow Cooker Steak'n'Onion Soup


Let this soup cook in your crock pot all day and you'll come home to a hot, healthy and tasty meal--a realy family pleaser.



Ingredients:

  • 2 lbs ribeye beef tips
  • 1 cup white onion, sliced thin (Vidalia preferred)
  • 1/2 cup celery, sliced thin
  • 1/2 cup carrots, diced (optional)
  • 20 oz / 2 cup fresh mushrooms, sliced (optional)
  • 16-20 oz beef broth or 4 Tbsp dry beef bouillon granules
  • 8 cups hot water
  • 1/4 tsp ground black pepper
  • 1 tsp chili powder
  • 2 tsp iodized salt
  • 1 Tbsp garlic powder
  • 1 cup half and half

Method

In slow cooker over high heat, place beef tips, onion, celery, (carrots & mushrooms optional) broth or bouillon, pepper, chili powder, salt and garlic powder. Next, pour hot water over all and stir. Allow to simmer for 7-8 hours, or until meat is tender. Remove from heat and stir slowly while adding half and half to mixture, allow to stand 10-12 minutes before serving. Serve with sesame wheat crackers or light dinner roll.

Notes: Cheesy Beef Stroganoff At 1/2 hour before removing from high heat, add 4 oz stroganoff noodles and cook until tender. Once noodles are tender enough, remove from heat, stir slowly while adding cream and 1 cup of cheddar cheese. Fold mixture until cheese has completely melted. This is best served as a main course with Italian garlic breadsticks.
