Smoked Paprika-Orange Sirloin and Grape Tomato Grill

Cubes of beef sirloin are marinated in a mixture of soy sauce, balsamic vinegar, brown sugar, orange juice and peel, garlic, and smoked sweet paprika. The cubes are then skewered with grape tomatoes and grilled.
 

Ingredients

  • 1 teaspoon smoked sweet paprika
  • 1 teaspoon minced garlic
  • 2 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 1/3 cup fresh orange juice
  • 1 teaspoon grated orange zest
  • 2 lbs. well-trimmed boneless beef sirloin steak, 1 1/2" thick, and cut into 1 1/2" cubes
  • 24 grape tomatoes
  • 3 cups cooked long-grain white rice
  • Garnish:
  • 3 tablespoons chopped parsley
 
Method

In a large bowl, stir together first seven ingredients. Place steak cubes in a one-gallon zipper-seal bag. Pour first mixture over steak. Seal and gently shake until well coated. Marinate in refrigerator for 6-8 hours. Prepare charcoal or gas grill to medium-high heat. Spray grates with non-stick cooking spray. Drain meat well. Beginning and ending with steak, alternate steak and tomatoes onto six 12-inch skewers. Grill skewers for 10-15 minutes, turning occasionally, to desired doneness. Place rice on a serving platter. Arrange skewers on rice. Sprinkle with parsley. Serve immediately.

 

Notes: This recipe makes a beautiful and elegant presentation, in addition to being healthy and delicious. I love to use fresh grape tomatoes from my garden.
