In a large sauce pan, add all of the ingredients and bring to a boil. When boiling, reduce heat to medium low heat and simmer for 1-1/2 to 2 hours or until desired thickness. When done transfer to a glass container and cool for about an hour and place in the refrigerator.
Ascorbic acid and potassium sorbate can be purchased in a beer/wine supply store.
