Smothered Meatloaf


A glaze of ketchup, mustard and brown sugar gives this moist meatloaf its distinctive flavor.



Ingredients:

  • 3 lbs lean ground beef
  • 1 medium onion
  • 1 large egg
  • 1/2 cup milk
  • 1 to 1 1/2 cup bread crumbs
  • 1 tbsp season salt
  • Sauce:
  • 1 1/2 cup ketchup
  • 1/4 cup prepared yellow mustard
  • 1 cup brown sugar

Method

Preheat oven to 400 degrees. Mix together egg and milk then set aside. Dice onion and add to egg and milk mixture. Add ground beef to mixture and mix using hands. Slowly add bread crumbs to ground beef mixture until ground beef can be shaped. Use bread loaf pan, or other suitable baking dish, and form ground beef into a football shape. Place in pan and bake for 30 minutes. While meatloaf is initially baking, mix together sauce ingredients and heat for 2 minutes in microwave. At 30 minute mark, pour 3/4 of sauce over meatloaf and return to oven for an additional 20 minutes. When meatloaf is thoroughly cooked and no longer pink in the center, remove from oven. Slice into 1/2 inch thick slices and serve hot. You may choose to drizzle a little leftover sauce on your meatloaf before serving.

Notes: This is not grandma's meatloaf. It is moist and flavorful with lots of yummy sauce.
