SOUTHWEST CASSEROLE

This mixture of ground beef with two kinds of beans, corn and cumin is topped with cheese and served with avocado, green onion and corn chips.
 

Ingredients

  • 1 Pound Hamburger (ground beef)
  • 1 small white onion
  • 2 cloves garlic, finely chopped
  • 1/2 tsp. Cumin
  • 1/4 tsp. Black pepper
  • 1/2 tsp. Salt
  • 1 can (Ranch Style Brand) Black Beans, drained
  • 1 can (Ranch Style Brand) Chili Beans
  • 1 can Whole Kernel Corn, drained
  • 2 cups Shredded Mild Cheddar or Mexican-Blend Cheese
  • 1 Ripe Avocado
  • 1 small bunch Green Onions
  • 1 Bag Corn Chips

Method

Brown Hamburger over med-high heat until no longer pink, but not crispy. Add onion; cook about 3 minutes. Add garlic, Cumin, Black pepper and Salt; cook for 1 minute more. Add both cans beans, but drain only the Black Beans, and then add the drained Corn. Stir to combine. Reduce heat to low, cover pan and cook to allow flavors to "marry" and everything to heat through. This takes about 10-15 minutes. Add cheese on top; cover for 1 or 2 minutes to allow to melt. To serve, top with sliced Avocado and chopped Green Onions. Serve with Corn Chips. If desired, remove mixture to a serving dish that can be placed in oven. Top with cheese and bake at 350 for 10-15 minutes, then proceed to top with Avocado and Onions.

 

Notes: This is a very versatile dish. I omit Corn sometimes, or just use 1 kind of Beans, depending on what is in my Pantry. More spices, such as a diced Jalapeno, can be added for those who like spicier foods. If desired, add a Fruit Salad with Oatmeal Cookies for Dessert.
