Spicy Hot Tomato Jam Beef Rollup Burgers

This is an interesting way to incorporate flavors and textures into a hamburger. Hot tomato jam is rolled into the ground beef like a jelly roll and then grilled as usual.
Ingredients
- 1 pound ground chuck
- 1 egg, slightly beaten
- 4 tablespoons hot tomato jam, divided
- 1/2 cup panko bread crumbs, divided
- 1 tablespoon Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 3 ounces andouille sausage, cooked and ground
- 6 slices cheddar cheese, optional
- 6 rolls or buns
- Spicy hot tomato jam
- 2 green onions or scallions, chopped

Combine ground chuck with egg, 1 tablespoon jam, 1/4 cup bread crumbs, Parmesan cheese, salt and pepper in a large bowl. Place a 12 X 16 piece of waxed paper on a work surface. Place meat mixture on surface and pat out into a 9 X 12 inch rectangle. In a small bowl, mix 1 /4 cup panko with remaining hot jam jam. Spread on rectangle, 1 inch in on all sides. Place sausage down the 9 inch center of the rectangle. Using the wax paper, lift one 9 inch edge of meat and carefully roll to make a tight jellyroll. Wrap completely in waxed paper. Twist ends and make a tight roll. Place in refrigerator to chill at least 1 hour or overnight. Heat grill on medium high and oil grill. A smaller grill rack, or a fish rack with cross grid, works best. Slice beef roll into 6 even slices. The easiest way is to slice roll in half, and then each half into thirds. Grill 5 minutes per side or until done. Place a slice of cheese on grilled burger and heat until melted. Remove from grill using a large spatula. Toast rolls if desired. To serve, place grilled burger on roll then top with spicy hot tomato jam and a sprinkle of scallions.
