Spicy Southwest Bacon Burgers

Cilantro, avocado, cheddar jack cheese and spicy seasonings infuse these juicy burgers with flavors of the southwest.
Ingredients
- 2 lbs ground chuck
- 1 1/4 teaspoons kosher salt
- 1 can chipotles in adobo
- 4 cloves garlic, chopped
- 1/4 cup grated yellow onion
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 limes, juiced
- 2 tablespoons chopped cilantro
- 2 avocados, peeled and chopped
- 12 strips applewood smoked bacon
- 1 packet cheddar jack cheese
- 6 sesame seed hamburger buns

Preheat a greased grill pan over medium high heat. Place ground chuck in a large bowl. Add 1 teaspoon salt, 2 chopped chipotle peppers, 1 tablespoon adobo sauce, garlic, grated onion, cumin, and oregano. Gently mix together but do not overwork meat. Form into 6 patties. Place sour cream, mayonnaise, lime juice, cilantro, and 1/4 teaspoon salt in a mini food processor and blend until smooth. Pour into a bowl and add avocado. Mash with a fork until blended but still chunky and set aside. Cook bacon on grill pan until crisp. Remove bacon and drain on plate lined with paper towels. Wrap in foil to keep warm. Place patties on greased grill pan and cook for 4 minutes on each side for medium. During last 3-4 minutes of cooking, top each burger with a slice of cheddar jack cheese. Remove burgers from heat and place on a plate. Let them rest for 5 minutes. Lightly toast bun halves on grill pan for 2 minutes and set aside. Place a cheese topped burger patty on each toasted bun bottom. Top each patty with 2 slices bacon and some avocado and cilantro spread. Add bun tops and serve.
Notes: Add more chipotles in adobo if you like an even spicier burger.
