Spicy Orange Beef and Rice


Beef sirloin is cooked with crushed red pepper flakes, green bell peppers, orange juice and beef broth, and served over brown rice.



Ingredients:

  • 2 Tablespoons cooking oil
  • 1 teaspoon red pepper flakes
  • 1 pound boneless beef sirloin steak, cubed
  • 2 green bell peppers, cut into squares
  • 1 cup orange juice
  • 1 cup beef broth
  • 2 cups cooked brown rice

Method

Heat oil in a heavy skillet. Sprinkle red pepper over sirloin; brown meat. Add green pepper squares to skillet and saute 2-3 minutes. Drain fat. Add orange juice and beef broth to skillet; bring to a boil. Reduce heat and simmer 10 minutes. Serve beef and peppers over brown rice.

Notes: Just the right amount of sweet and spice. (You may wish to thicken the juices with a little cornstarch mixed with water.)

Number of servings: Serves 4-6
