Steak and Eggs Parmesan

Broiled steaks topped with eggs and cheese--a quick, easy, main dish.
 

Ingredients

  • 2 strip or rib eye steaks
  • 4 eggs
  • 1 cup grated Parmesan or asiago cheese (or both) blended
  • Fresh ground black pepper
 
Method

Broil steaks to preferred doneness. Remove from broiler and lay on a very level baking sheet. Without breaking yolks, place 2 eggs atop steaks, sprinkle grated cheese to cover entire steak. Grind fresh black pepper liberally over cheese, return to broiler, 3-4 inches from flame. Watch closely as cheese begins to darken. When cheese turns a golden brown remove from broiler and serve with home fries, etc.

 

Notes: Spread some cheese around the egg edges to stop them from sliding around.
