Stuffed Burger

Dress up ordinary ground beef with three kinds of cheese, purple onion, baby spinach and grape tomatoes.
 

Ingredients

  • 1 large purple onion, chopped and steamed
  • 4 pieces cooked and chopped bacon
  • 1 lb 80% beef
  • 1 cup grape tomatoes, halved
  • 1 cup fresh baby spinach
  • 1/4 cup good ricotta cheese
  • 1/4 cup Parmesan cheese
  • 1/2 cup spicy Jack cheese, chunky or chopped
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
 
Method

Chop onion and steam until softened, then add to beef. Add all remaining ingredients except spinach and mix well. Prepare patties, taking 1/2 burger, place spinach in center, then cover with other 1/2 burger. With a little extra virgin olive oil, in a hot skillet, cook each burger on low to medium heat, covered. If 1 inch thick, flip after 5-7 minutes. If 2 inches thick, flip after 10-12 minutes. Double check temperature as finished burger should be at least 160 degrees. Serve on a soft bun with favorite dressing (example: balsamic vinaigrette).
