Stuffed Cabbage Casserole

The title of this recipe says it all. This is a new way to serve your family a healthy dinner.
 

Ingredients

  • 1 1/2 lbs extra lean ground beef
  • 3 15 oz cans tomato sauce
  • 1/3 cup minute rice
  • 1/3 cup dried parsley
  • 1/2 tsp pepper
  • 1 large head cabbage cut into 2 inch squares
  • 2 cups shredded cheddar cheese

Method

Spread 1/2 can tomato sauce and 1/2 cup of cheddar cheese in large roasting pan. In a large bowl mix together ground beef, rice, parsley, pepper and 1 cup tomato sauce. Place meat mixture in roasting pan. Pat into an oval shape that allows at least 2" between it and sides of the pan. Add cut up cabbage to pan filling in space around meat mixture. Cover with remaining shredded cheddar. Top with remaining tomato sauce. Bake at 350 degrees for 2 hours or until cabbage is as tender as you like it.
