Stuffed Cabbage Rolls


A meat mixture of ground round, cooked rice, poultry seasoning, and egg is wrapped inside cabbage leaves. The leaves are then cooked in a tomato sauce, brown sugar and lemon juice mixture.



Ingredients:

  • 12 large cabbage leaves  
  • 1 1/4 lbs. ground round  
  • 1 1/2 teaspoon salt  
  • 1/2 teaspoon ground black pepper
  • 1 small onion, chopped
  • 1 cup cooked rice
  • 1 egg, beaten  
  • 1/2 teaspoon poultry seasoning  
  • 2 Tablespoons vegetable oil  
  • 2 (8 oz.) cans tomato sauce  
  • 1 Tablespoon brown sugar  
  • 1/2 cup water  
  • 1 Tablespoon lemon juice or vinegar

Method

In a large pan, cover cabbage leaves with boiling water and let stand until limp. Remove from pan; drain and set aside. In a large bowl, combine ground round, salt, pepper, onion, cooked rice, egg and seasoning. On a work surface, lay cabbage leaves. Place equal portions of meat mixture in center of each leaf. Fold over and fasten with toothpicks. Heat oil in a deep skillet or Dutch oven; place cabbage rolls in pan and saute until browned. In a medium bowl, combine tomato sauce, brown sugar, water and lemon juice. Pour mixture into skillet with cabbage rolls. Simmer, covered, about 1 hour.
