Flank steak stuffed with bell peppers, onion, and mushrooms and baked with a bacon wrap.
Flattening the flank steak by pounding it between two sheets of plastic.
Fry half the bacon in a large skillet.
Remove bacon when crisp, reserving the fat. Add the pepper to the bacon drippings and cook until almost soft, and then add onion and cook until soft. Add mushrooms and cook for another 2 minutes. You may need to add some olive oil if it gets too dry. Add bread crumbs until it becomes a moist stuffing consistency.
Crumble cooked bacon and add to the stuffing. Let cool and spread over flank steak. Roll steak jellyroll style and secure with toothpicks on each end. With the remaining raw bacon, starting at the end, wrap a piece around the steak roll. Continue until the steak is covered with bacon end to end. Place in 350 degree oven and cook until desired doneness. Let sit before slicing.
