Swedish Stew


This baked casserole has layers of cooked ground beef & onions, sliced potatoes, carrots, and canned peas, seasoned with dried dill weed.



Ingredients:

  • 2 lbs ground beef chuck
  • 1 medium onion, diced
  • 5-6 medium potatoes, sliced thin
  • 6-7 carrots, sliced thin
  • 8 oz can sweet peas (drain off half of the liquid)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried dill weed
  • 5-6 Tbsp margarine or butter

Method

Brown ground meat with onion, salt and pepper; drain off most of the grease. Put half of the mixture in bottom of a large covered casserole. Add 1/2 of the can of peas and 1/2 of the carrots on top of that. Cover with a layer of sliced potatoes. Add remaining ground meat, peas and carrots, and top off with remaining potatoes. Dot top with the 5-6 Tbsp margarine or butter; sprinkle with dill weed, and lightly with additional salt and pepper. Bake in 325 degree oven for 1 to 1 1/2 hours, until potatoes are slightly browned and fork tender.

Notes: My family loves this recipe, even the "little ones". I like to serve hot biscuits or rolls with it. It's a hearty, economical meal with your meat and veggies all in one.
