Sweet and Sour Tenderloin Salad

This untraditional salad will become a favorite in your household as you discover a new way to serve beef.
Ingredients
- 1 cup boiling water
- 1 beef bullion cube
- 2 tbsp soy sauce
- 2 tbsp apricot jam
- 2 tbsp rice wine vinegar
- 1 tbsp hoisin sauce
- 1 tbsp sesame oil
- 12 ounces beef tenderloin, thinly sliced
- 8 cups mixed baby greens
- 1/2 cup shredded carrot
- 4 green onions, thinly sliced white and tender green part
- 1/2 cup minced red pepper

Method
Heat water in a medium sauce pan and add bullion cube, heat over medium high heat until dissolved. Add soy sauce, jam, vinegar and hoisin sauce, reduce heat and simmer. Meanwhile in a medium skillet over medium high heat saute tenderloin in sesame oil until just seared, medium rare. Combine remaining ingredients in a large bowl and toss to mix. Divide among serving plates and top with beef. Pour sauce mixture into skillet, and boil over medium high heat, scraping up browned bits of beef. Continue cooking until reduced by half. Divide sauce evenly over salads and serve warm.
Notes: It's an unusual way to cook beef, but makes a wonderful main dish that is sure to please. The combination of Asian ingredients really compliments the beef.
