Ingredients
  • 4-6 lb beef chuck roast
  • Meat seasoning (of your choice)
  • 1 large onion, diced
  • 1 16 oz bottle barbecue sauce (your choice)
  • 1 cup dried cranberries
  • 1 loaf crusty Italian bread
  • Nut and dried fruit mix

Method

Season chuck roast. Place meat and onion in crock-pot and cover with water. Set crock-pot on low and cook meat for 8-10 hours. Remove meat and drain off all water. Place meat back in crock-pot and pour entire bottle of sauce over meat. Cover and cook on low 8-10 hours. Lift meat from sauce; shred roast and mix meat with cranberries. Slice bread thinly and toast lightly. To serve as appetizer, place meat in a circle on a large platter; fill center with a nut and dried fruit mixture. Place a large spoonful of meat mixture on toasted bread rounds. Top with fruit and nut mixture.
