Sweet and Spicy Hamburgers

Ground chuck is flavored with a homemade BBQ sauce, formed into jumbo burgers, stuffed with a little mozzarella cheese, and grilled.
Ingredients
- Barbecue Sauce:
- 14-oz ketchup
- 1 teaspoon celery salt
- 1 teaspoon granulated garlic
- 1 teaspoon onion salt
- 1 teaspoon sweet paprika
- 1 1/2 teaspoons cayenne pepper
- 1/3 cup brown sugar
- 1/3 cup molasses
- 3 tablespoons honey
- 1 tablespoon Liquid Smoke
- 1/3 cup Sauvignon Blanc wine
- ....
- 4 pounds ground beef chuck
- Other:
- 1/2 grated mozzarella
- 1/2 cup sliced red onion
- 1/2 cup sliced red bell pepper
- Canola oil
- Cooked bacon, if desired

Method
Combine barbecue sauce ingredients and whisk together until smooth. Mix 1/2 cup of this barbecue sauce with the ground beef. Form into six very large burgers. Make a small well in each hamburger and fill with mozzarella cheese. Cover cheese well with meat. Make another well or indentation in hamburger. Hamburgers will cook on outside first. The well in center of burger will ensure center cooks at the same time. Grill on medium heat 10-15 minutes. Flip hamburgers after 5-7 minutes. Brush with additional BBQ sauce. Brush with additional sauce after removing from grill. While burgers are cooking, saute onion and bell pepper in a little canola oil. They should be crisp-tender; cook no longer than 4 minutes. Top hamburger with onion and pepper. You can also top with bacon, if desired.
