Sweet and Spicy Mini-Burgers

A mixture of ground beef, pork sausage and seasonings is formed into small patties and cooked, topped with cheese, and served in buns with maple syrup-flavored onions.
 

Ingredients

  • Maple Onions:
  • 1 1/2 tbsp butter
  • 1 1/2 tbsp olive oil
  • 3 yellow onions, medium dice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp sugar
  • 3 tbsp pure maple syrup
  • Patties:
  • 1 1/2 lbs ground beef chuck
  • 1/2 lb bulk pork sausage
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp soy sauce
  • 1 tsp rubbed sage
  • 1 tsp garlic powder
  • 1 to 1 1/4 tsp crushed red pepper flakes
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 1/4 cups grated white cheddar cheese
  • 18 potato dinner rolls, sliced in half and lightly buttered

Method

Maple Onions: Melt butter in olive oil using a large skillet. Add onions, salt, pepper, and sugar; cook, scraping browned bits off bottom of pan frequently, until onions are golden brown and caramelized, about 20 minutes. Deglaze pan with maple syrup, stirring to coat onions and loosen any browned bits from pan. Continue to cook 2 minutes more. Remove from pan then set aside and keep warm. Meanwhile, thoroughly combine ground beef, pork sausage, Worcestershire, soy sauce, sage, garlic powder, red pepper flakes, salt and pepper. Shape beef mixture into 18 miniature patties, about 3 inches in diameter. Using thumb, make a slight indention in the center of each patty to prevent meat from "bulging" during cooking. Preheat a broiler. Heat a grill pan or large nonstick skillet, over medium-high heat and evenly coat with nonstick spray. Cook the first side for 5 minutes, flip and continue cooking 4-5 minutes longer. During last two minutes of cooking, sprinkle about 2 tbsp white cheddar on top of each patty; cover pan to melt cheese. While cheese is melting, place rolls, buttered side up, on a rimmed baking sheet under broiler; toast 1-2 minutes, or until lightly browned. To assemble, place the cheese-topped patties on the bottom half of the dinner rolls. Top each with a dollop of Maple Onions and cover with roll tops. Arrange 3 mini burgers on each plate and serve.
