Sweet 'n' Spicy Steak

Beef rib eye steaks are spread with a garlic butter and Italian seasoning mixture, chilled, then grilled and brushed with pepper jelly to glaze.
 

Ingredients

  • 4 beef ribeye steaks, cut 1-inch thick
  • 1 stick butter, softened
  • 4 cloves garlic
  • 1 tbsp dried Italian seasoning
  • 4 tbsp Pepper Jelly (homemade or purchased)
  • 1 Tbsp. water

Method

Prepare Garlic Butter by chopping the garlic and adding it to the butter along with Italian seasoning. Spread both sides of the steaks with some of the garlic butter; chill 8 hours or overnight. Grill these steaks on the top shelf of your gas grill, searing each side. After searing, place the pepper jelly and water in a bowl and mix well. Continue to cook steaks. Shortly before they are done, reduce the grill heat and brush on the pepper jelly mixture. This can burn because of the sugar content in the jelly, so keep the heat low, the steaks high and watch carefully.

 

Notes: This recipe came from my husband and me, after making our own Pepper Jelly and having so much around we started creating uses for it other that putting over cream cheese with crackers. In the store Pepper Jelly can usually be found by the spices, condements or other jellies.
