Taco Meatballs with Beans and Rice

A meatball mixture with ground beef and taco seasoning mix is cooked in a stewed tomato-beef bouillon liquid. Rice and canned beans are added and cooked in this seasoned broth.
Ingredients
- 2 cubes Beef bouillon
- 1 can Mexican Stewed Tomatoes
- 3 cups Water
- 1/2 to 1 whole pkg. Taco Seasoning mix (to taste)
- 1 lb Ground Beef
- 1/4 cup fine dry bread crumbs
- 1 egg, beaten
- 1 15 oz. can of Red or Black Beans (rinsed and drained)
- 1 tsp Garlic powder
- 1/2 tsp Salt
- Pepper to taste
- 1 1/2 cups uncooked white rice

Method
In a Large pot combine stewed tomatoes, 2 cups of the water, & beef bouillon cubes; bring to a boil. Meanwhile, in a bowl mix ground beef, bread crumbs, egg, and 1/2 to 1 whole package of taco seasoning mix (This is to your taste; I use 1/2 package.) Using a small Ice cream scoop, drop meatballs into boiling sauce. Reduce heat to a simmer. Simmer for 20-30 min, until meat is fully cooked. Add Rice, the remaining cup of water, the Beans, Garlic powder, Salt and Pepper. Simmer until rice is done.
Notes: For a sweet variation add one 15 oz. can pineapple chucks in syrup when you add the rice. Reduce the water by half.
