Taco Pie

This features ground beef and beans in a mixture of cream of chicken soup, canned tomatoes and chili powder. Sprinkle it all with tortilla chips and cheese, then pop it in the oven for a few minutes until the cheese melts.
 

Ingredients

  • 1 1/2 pounds ground beef
  • 2 stalks celery, chopped
  • 1 large onion, chopped
  • 2 cans cream of chicken soup
  • 2 cans ranch-style beans
  • 1 can Rotel Tomatoes with peppers
  • 1 tbsp. chili powder
  • 1 medium-size bag taco-flavored Tortilla chips
  • Grated cheese

Method

Brown meat in large skillet; drain. Stir in all ingredients except chips and cheese. Add salt and pepper to taste. Cook until onions and celery soften. Stir in some chips and sprinkle some cheese on top. Bake at 350 degrees for 2-3 minutes to melt cheese.

 

Notes: This is one of my family's favorite meals. Serve it with a salad and extra chips. It is also good the next day.
