Halved poblano peppers are filled with a taco-seasoned ground beef and green chilies mixture, baked in enchilada sauce, then topped with shredded cheese and tortilla chips.

  • Servings: 4


4 Poblano Peppers, halved and seeded
1 lb Very Lean Hamburger, ground beef
1 Packet Taco Seasoning Mix
¼ cup Water
1× 4-oz. can Chopped Green Chilies
1 can Enchilada Sauce, we like medium hotness
Shredded Colby/jack Cheese
Crushed Blue Corn Tortilla Chips


Brown hamburger; drain fat; add taco seasoning, water and chilies. Simmer 5 minutes. In a 9" square baking dish, place 1/2 of the enchilada sauce on bottom. Place peppers in sauce. Fill each half with hamburger mixture. Cover with foil and bake for 35 minutes at 350 degrees. Remove foil, sprinkle the top with cheese and crushed chips, and put back in oven for 5 minutes.

Helpful Tips:

This recipe has a little "heat" to it. If you like you may use mild enchilada sauce. I serve this with seasoned rice: 2 cups of water and 1 packet of taco seasoning; bring to boil, add 2 cups Minute rice. Cover, remove from heat. Let stand for 5 minutes and fluff with fork.
