This is a great way to impress the family with a new mexican dish. Just toss everything in a casserole and bake.
Brown beef, onions and peppers, and drain off fat.
Add seasoning mix and pepper, let simmer on low heat 5-10 minutes stirring.
Pour into greased or sprayed 2 to 2-1/2 quart casserole dish.
Gently spread the refried beans over the meat mixture.
Pour the taco sauce over the meat mixture spreading evenly.
Sprinkle with 1/2 the grated cheese, patting down a bit with spoon.
Prepare the muffix mix add 1/8 cup of sugar.
Let corn muffix mixture stand for 10 minutes.
Gently spoon the muffin mixture over the casserole.
Bake in 350 degree oven for 1/2 an hour.
Serve with remaining grated cheese and sour cream.
Notes:
I made just with ingrediants I had in the kitchen at the time.
Turned out very yummy.
I covered with glass cover after 20 minutes so it wouldn't brown too much. I was desperate for a new recipe to do with hamburger. Came up with this yesterday and it was a hit.
