Taco Bake Hot Dish


This is a great way to impress the family with a new mexican dish. Just toss everything in a casserole and bake.



Ingredients:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 package taco seasoning mix
  • 1 tsp cayenne pepper
  • 1 12 oz can tomato paste
  • 1 8 oz can tomato sauce
  • 1 16 oz can refried beans
  • 8 oz jar taco sauce
  • 16 oz grated cheddar cheese
  • 1 8 1/2 oz box corn muffix mix
  • 1/8 cup sugar
  • Sour cream

Method

Brown beef, onions and peppers, and drain off fat. Add seasoning mix and pepper, let simmer on low heat 5-10 minutes stirring. Pour into greased or sprayed 2 to 2-1/2 quart casserole dish. Gently spread the refried beans over the meat mixture. Pour the taco sauce over the meat mixture spreading evenly. Sprinkle with 1/2 the grated cheese, patting down a bit with spoon. Prepare the muffix mix add 1/8 cup of sugar. Let corn muffix mixture stand for 10 minutes. Gently spoon the muffin mixture over the casserole. Bake in 350 degree oven for 1/2 an hour. Serve with remaining grated cheese and sour cream.

Notes: I made just with ingrediants I had in the kitchen at the time. Turned out very yummy. I covered with glass cover after 20 minutes so it wouldn't brown too much. I was desperate for a new recipe to do with hamburger. Came up with this yesterday and it was a hit.
