
Ground beef is patted onto one half of each corn tortilla. As it is cooked in oil, the other side of the tortilla is lifted over, forming the taco shape. Assorted toppers are added to fill the taco.
Heat skillet/griddle to medium-high heat. Add just enough oil to cover the bottom of the pan (approx. 2 tbs.) Some oil is needed, in order for the tortillas to crisp.
On your work surface, lay-out eight (8) tortillas and pat hamburger portions directly onto one half of each tortilla; salt & pepper lightly.
ONE AT A TIME, add FLAT tortilla to heated pan. Very quickly the tortilla will become soft. Flip the free side of the tortilla over to cover the meat. Fry for approximately 5 minutes, turning half-way through. Tortilla should be golden brown & crisp, meat will lose its pink color. (Repeat frying for each tortilla, adding more oil as needed.)
Remove tacos from pan; add toppings and serve. (Better yet, give each person their own plate and let them add their own toppings).
Notes:
This is a great meal when you have a home filled with people. (Teenagers especially.) Give each person a job cutting or grating. It is just as easy to fix these tacos for twenty as it is for two. I have never seasoned the hamburger with purchased taco flavor packs, but it could be mixed in before patting hamburger on the tortilla. Please try them first without the packaged stuff.
Any type of onion will work, we like the sweetness of the red onion.
Any style of lettuce will work, we like green leaf lettuce.
Any cheese will work as long as it melts well; we like cheddar.
