Tasty Eats Chili

A mix of hot peppers add spicy flavor to this hearty beef and bean chili.
 

Ingredients

  • 8-9 dried guajillo peppers, stems and seeds removed
  • 5-6 dried chipotle peppers, stems and seeds removed
  • 3 lbs lean ground beef
  • 1 large yellow onion, finely chopped
  • 3 tbsp minced garlic
  • 1 7 oz can green chiles
  • 3 tbsp chili powder, preferably New Mexico hot
  • 4 tbsp ground cumin
  • 2 tsp salt
  • 2 tsp freshly ground black pepper
  • 1 small can tomato paste
  • 1 cup chicken broth
  • 2 cups water
  • 1 cup beer
  • 3 cans kidney or white northern beans, with liquid
  • 1 1/2 tbsp maple syrup, or to taste

Method

Place dried peppers in a small saucepan with enough water to cover. Bring to a boil, reduce heat, and simmer 30-40 minutes. Place peppers and 1 cup of the water into a blender and blend until smooth. Set chili paste aside. Brown ground beef in a large stockpot or saucepan, over medium heat, stirring until crumbly then drain excess drippings. Add onions and garlic then cook 4-5 minutes more, until onions are translucent. Add green chiles, regular chili powder, cumin, salt and black pepper then mix well. Simmer over medium heat 10 minutes, stirring to prevent sticking, to blend flavors. Stir in tomato paste, chicken broth, 3/4 cup chili paste and 2 cups water. Bring to boil and reduce heat. Cover and cook 1 hour. Add beans with liquid, and beer. Stir, and cook an additional 45 minutes to one hour, until of desired consistency, stirring occasionally. Taste and adjust amount of chili paste and other seasonings as necessary. Add maple syrup and cook 5-10 minutes more.

 

Notes: You can make this a Texas chili by omitting the beans and adding another pound or two of ground beef. Or make it vegetarian by going the other way, omit the ground beef, substituting 1 can of beans for each pound of beef.
