Tex-Mex Meatloaf

This meatloaf mixture contains ground beef, rolled oats, eggs, and ketchup, plus chili powder, cumin and salsa for the Tex-Mex touch. It's topped with green pepper rings.
Ingredients
- 1 lb ground beef
- 1 tsp salt
- 1/2 cup quick-cooking rolled oats
- 1 cup thick and chunky salsa
- 3 eggs, beaten
- 3/4 cup ketchup
- 1/4 tsp ground cumin
- 1/4 tsp chili powder
- 1 bell pepper

Method
Preheat oven to 375 degrees. In a large bowl combine beef, salt, oats, salsa, and eggs. Mix well with hands. Turn mixture into a glass baking dish and form into a loaf. In a small bowl, combine ketchup, cumin, and chili powder. Spread on top of meatloaf. Bake in oven for 45 minutes. While baking, slice pepper into rings. Remove meatloaf from oven and place pepper rings on top. Return to oven for 15 minutes until loaf is done. Remove and let cool for 10 minutes.
Notes: This makes great sandwiches the next day. Everyone loves this and always wants to know what is in it.
