Texas Pot Roast


Beef eye of round roast is cooked in the crock pot with vegetables and Rotel tomatoes & green chilies until the meat is fall-apart-tender.



Ingredients:

  • 4-5 lb Beef Eye of Round Roast
  • 2 tsp Steak Seasoning
  • 1 Bag of Small Red Potatoes
  • 8 oz Baby Carrots
  • 1 lg Yellow Onion
  • 1/2 of a Green Cabbage
  • 4 Beef Bouillon Cubes
  • 2 Cloves Garlic
  • 28 oz canned Rotel tomatoes & green chilies
  • 28 oz water

Method

Rub steak seasoning into roast and allow to rest while you prepare the remaining ingrdients. Cut Onion into large pieces; cut out core of cabbage and chop loosely; and mince the garlic cloves. Place meat in large crock pot. Layer in the onion, carrots, cabbage, and potatoes; distributing vegetables evenly. Sprinkle minced garlic on top and pour in Rotel and water. Set crockpot on low heat setting about 12 hours.
