The Haystack Burger

On taco seasoned beef, build “haystacks” layering choices from the buffet on top of the meat.

2 tsp Kosher Salt, divided
1 Tbsp Ancho Chili Powder
½ Tbsp Ground Cumin
1 tsp Cornstarch
¾ tsp Black Pepper, divided
½ tsp Smoked Paprika
½ tsp Ground Coriander
3 Tbsp Vegetable Oil
1 Medium Vidalia or Other Sweet Onion, diced
1 Bay Leaf
1 Small To Medium Red Bell Pepper, seeded and small dice
1 Medium Carrot, shredded
1× 10 oz can Mild Diced Tomatoes & Green Chilies; Drained Well, divided
⅔ cup Tomato Ketchup
1 Tbsp Worcestershire Sauce
2 Tbsp Chopped Cilantro
2 lbs Ground Beef, 80% lean
¼ cup Chopped Pitted Black Olives
6 Potato Rolls
1× 10 oz Container Bacon & Horseradish Cheese Spread
6 Crisp Iceberg Lettuce Leaves


Heat a covered gas grill to medium high heat. In a small bowl, whisk 1 1/2 teaspoons salt, chili powder, cumin, cornstarch, 1/2 teaspoon black pepper, paprika and coriander, then set aside. In a large skillet, heat 1 tablespoon vegetable oil. Add onions and bay leaf, then cook 3-4 minutes or until onions have softened. Add peppers and carrots, then cook 3-4 minutes to soften. Stir in half of the diced tomatoes and green chilies, ketchup, Worcestershire, salt and black pepper. Reduce heat to medium and simmer relish for 5 minutes, stirring occasionally. Remove from heat, stir in cilantro and set aside while preparing burgers. Break ground beef up on to a sheet pan. Sprinkle evenly with spice mixture, black olives and remaining diced tomatoes, breaking up any large chunks and green chilies. Gently mix and form into 6 patties about 3/4 inch thick. Grease grill rack with remaining vegetable oil. Grill patties over medium heat, 6-8 minutes per side, for rare to medium temperature. During the last minutes of cooking time, toast cut sides of rolls on outer edges of grill. To assemble burgers, spread bottom half of each roll with a heaping tablespoon of cheese spread. Layer with a lettuce leaf and a burger. Top burger with relish.

Helpful Tips:

In nearby Lancaster County there are Amish and Mennonite communities known for the haystack supper. Traditionally, a large variety of prepped fresh vegetables and toppings are laid out buffet-style. Guests are given a plate of taco seasoned beef and able to build their own “haystack” layering their choices from the buffet on top of the meat. The dinner usually helps to raise money for families in need and has inspired my Mexican flavored burger.
