The Original Mexican Barbequed Beef Sandwich

Shredded beef is combined with taco seasoning mix and spooned atop split hard rolls, then topped with salsa, sour cream, tomato and lettuce.
 

Ingredients

  • 2 pounds boneless lean beef, cut in cubes
  • 1 cup water
  • 1 cup beef broth or bouillon
  • 1 1.25 ounce pkg taco seasoning mix
  • 8 hard rolls, split and lightly toasted
  • 1 cup salsa
  • 1/2 cup sour cream
  • 8 thin tomato slices
  • 1 cup shredded lettuce

Method

Combine beef cubes, water and bouillon in a large saucepan and bring to a boil. Cover and simmer for 1 hour, or until very tender. Drain off most of liquid. Shred beef cubes using 2 forks. Stir in taco seasoning mix. Cook and stir over medium heat for 5 minutes. To serve, spoon meat mixture onto bottoms of rolls. Top each with 2 tablespoons salsa, 1 tablespoon sour cream, a tomato slice and 2 tablespoons shredded lettuce. Add roll tops.

 

Notes: This recipe is a twist on the traditional taco. It is easy to prepare, and delicious.
