Three-Bean Taco Chili

Ground beef and sausage combine with kidney, great northern & black beans, other colorful ingredients, and taco mix plus ranch dressing mix.
 

Ingredients

  • 1 lb ground beef (round)
  • 1 lb hot-style sausage
  • 1 pkg taco seasoning mix
  • 4 tablespoons butter
  • 2 15 oz cans whole kennel corn (with liquid)
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 15 oz can kidney beans
  • 1 15 oz can northern beans
  • 1 15 oz can black beans
  • 1 15 oz can tomato sauce
  • 1 28 oz can diced tomatoes
  • 2 pkg ranch dressing mix
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon pepper (or to taste)

Method

Brown ground beef round and sausage in a large stock pot; drain. Stir in taco seasoning; set aside. In a skillet pour corn, but do not drain. Add onions, peppers and butter. Cook until onions and peppers are tender. Pour into browned meat. Add remaining ingredients. Cook and stir until thickened and bubbly. Can be eaten as a chili or spooned over corn chips. Optional: place a spoonful of sour cream on top of chili before serving.

 

Notes: Almost any kind of beans may be used. This may be made a few days before and refrigerated until needed. It also freezes well. Mild sausage can be used, if you want to tone down the heat.
