Tuscan Beef Skillet

Take an inexpensive cut of beef, add a medley of colorful vegetables, then top with Parmesan cheese for a healthy, tasty meal.
Ingredients
- 4 beef round steaks
- 2 cups sliced fresh mushrooms
- 1 cup chopped onion
- 1 cup chopped green sweet pepper
- 1/2 cup chopped celery
- 1 carrot, shaved into strips
- 2 cloves garlic, minced
- 1 14.5 oz can diced tomatoes
- 1/2 tsp crushed dried basil
- 1/4 tsp crushed dried oregano
- 1/8 tsp crushed red pepper
- 2 tbsp grated Parmesan cheese

Trim fat from round steak and cut into serving sized pieces. Spray a cold large skillet with nonstick spray. Add meat pieces to skillet and brown both sides of each piece. Remove meat from skillet. Add mushrooms, onion, green pepper, celery, carrot and garlic to skillet. Cook until vegetables are nearly tender. Stir in undrained tomatoes, dried herbs and red pepper. Add meat to skillet, spooning vegetable mixture over meat. Cover and simmer about 1 1/4 hours, or until meat is tender, stirring occasionally. Transfer meat to a serving platter. Spoon vegetable mixture over meat and sprinkle with Parmesan cheese. Serve with pasta, if desired.
